最近ご飯はもっぱら土鍋で炊いています。美味しいのはもちろんだけど、とにかく早く炊けるので。玄米だとちょっと時間かかるけど、白米や分づき米なら沸騰してから弱火で6分、火を止めて10分蒸らしたら炊きあがりです。炊飯器だと40分くらいかかるところ、蒸らしを入れても16分で炊けちゃいます。もちろん研いでから炊き始めるまで30分はおきますけどね。

早く炊けるから、豆ごはんもきれいな色に。きれいな色に仕上げるために、時間差で豆を入れたりといろいろ工夫してたけど、土鍋で炊けばよかったんですね。お米と豆と調味料(我が家は塩だけ)をいっしょに入れて炊くだけ。何の工夫もいりません。

驚きなのは麺をゆでるとき。お湯が沸騰して麺を入れたら蓋をして火を止めます。あとはそれぞれの「ゆで時間」おいておくだけ。ゆで時間8分のパスタもこの方法でOKでした。土鍋にしては高い、と思うかもしれませんが、きっと後悔しません。
