ココナッツオイルを使ってマロンパイを作ってみました

マロンパイ

卵や乳製品を使わずに作ったマロンパイ。栗の渋皮煮をまるごと入れて作りました。表面のつや出しには卵の代わりに玄米水飴を、バターの代わりにはココナッツオイルを使って。

マクロビ仕様でバターを使わずにパイ生地を焼く場合は菜種油を使うことが多いのですが、今回はココナッツオイルで。甘い香りなので、お菓子作りにはぴったり。

今回は溶けた状態のココナッツオイルを使いましたが、固まった状態のものを使えばほんとにバターと同じように使えそうです。20℃以下になると白く固まるココナッツオイルの性質がうまく利用できます。

卵の代わりに玄米水飴を少し水で緩くしたものを表面に塗って焼けば、パイを美味しそうに仕上げるためのつやもばっちり。メイプルシロップでも大丈夫です。
