しわが入らないように煮るコツは、水で戻さないことだそう。水に浸けるかわりに、あらかじめ混ぜ合わせた調味液に浸けておくんですって。

お水に分量の砂糖、塩、醤油、重曹を入れて煮立て、粗熱がとれたところに、さっと洗った黒豆を投入。今回は黒砂糖を使いました。

一晩おいて翌朝火にかけます。沸騰したら弱火にしてじっくり8時間(途中アクをとったり差し水をしたり)。もちろん鉄ナスもいっしょに入れます。これを入れると入れないでは、黒みがぜんぜん違います。

宇っちゃん農園の無農薬の黒豆は、ふっくら大きく膨らんで、ほんとに美味しく煮えました。
